They say we eat with our eyes first—and at Riviera, we take that to heart. Every dish that leaves our pass isn’t just a combination of flavours and textures. It’s a composition. A canvas. A visual narrative designed to stir emotion, spark curiosity, and heighten anticipation before the first bite.

In the world of fine dining, plating is not merely presentation. It is an extension of the chef’s voice and the restaurant’s identity. And in a culinary capital like Singapore, where aesthetics meet precision, plating is part of the performance.

Why Presentation Matters

The visual arrangement of food influences not only how it looks, but how it tastes. Research shows that beautifully plated dishes are perceived as more flavourful and valuable—even when the ingredients remain the same. But beyond perception, plating serves several vital purposes:

  • It signals intention: A deliberate arrangement tells the diner, “this is crafted, not just cooked.”

  • It sets the pace: A composed plate encourages diners to slow down, explore, and savour.

  • It frames the story: Just like a stage sets the mood for a play, the plate frames the story of the dish.

Our Plating Philosophy: Balance, Beauty, Meaning

At Riviera, our plating is guided by three core principles:

  1. Balance: We aim for harmony in every element—colour, height, texture, and spacing. A vibrant herb emulsion might contrast a charcoal-black protein, while a crisp tuile adds verticality to an otherwise horizontal composition.

  2. Beauty: Nature is our greatest muse. We often draw inspiration from landscapes, seasons, and organic shapes. A dish may evoke a garden in spring or a tide pool at low tide. Our ceramics are custom-crafted to complement the food, not distract from it.

  3. Meaning: Every design choice is intentional. If a sauce is brushed in a spiral, it may mimic the swirl of a shellfish’s habitat. If an edible flower is placed off-centre, it might suggest the asymmetry of nature. Plating becomes an act of storytelling.

A Look Inside the Process

The creation of a plated dish begins long before the service. It starts in the test kitchen, where chefs experiment with sketches, mock plates, and ingredient arrangements under different lighting.

Some elements we consider include:

  • Temperature: Hot food is never plated on cold ceramic.

  • Color Contrast: To highlight the vibrancy of ingredients like turmeric oil or beetroot glaze.

  • Eatability: We ensure beauty doesn’t hinder practicality—everything on the plate must be easy and pleasurable to eat.

Even the direction of plating—left to right, circular, ascending—affects how the eye moves across the dish and how the first bite is chosen.

Instagram-Worthy, But More Than That

In an age where food is photographed before it’s eaten, it’s tempting to chase “Instagrammable” visuals. But for us, plating is never style over substance. The goal is emotional impact, not just visual appeal. A perfectly composed dish should feel like a gift—wrapped in elegance, filled with surprise, and worth remembering.

Experience the Art for Yourself

Every evening, our chefs choreograph plates like artists with brushes. From minimalist arrangements to maximalist abundance, each dish reflects our dedication to culinary aesthetics and expression.
