Singapore’s iconic dishes—from Hainanese chicken rice to chilli crab, from kueh lapis to nasi lemak—are rooted in tradition. We pay homage to these roots while experimenting with texture, plating, and technique.


Take our Laksa-infused Lobster Bisque, for example. At first glance, it resembles a classic French soup, rich and velvety. But a single spoonful reveals notes of coconut, lemongrass, dried shrimp, and laksa leaf—an elegant ode to the hawker centre staple.


Our Rendang Short Rib, slow-cooked for 48 hours, melts on the tongue but retains the deep, aromatic spice profile of the original Malay dish. Garnished with puffed rice and charred banana blossom, it bridges time and technique.


Innovation in fine dining doesn’t always mean radical change. It’s often about refinement—highlighting the beauty of an ingredient without overpowering it. Our chefs use sous-vide precision, fermentation, espuma, and dehydration not to impress, but to bring out the fullest expression of each local flavour.


For example, our Kaya Toast Mille-Feuille layers crisp puff pastry with pandan custard and salted butter espuma. Served with a soft-boiled egg yolk emulsion and coffee crumble, it transforms a humble breakfast into a nostalgic finale.


Supporting Local Producers

We believe that celebrating local flavours also means supporting local producers. Many of our herbs, vegetables, and garnishes are sourced from Singapore’s own farms, including organic greens from Lim Chu Kang and edible flowers grown in rooftop gardens across the city.


Not only do these ingredients reduce our environmental footprint—they’re fresher, more vibrant, and infused with a sense of place.
